One of the staples in my house is my Chicken Fajita Mix. This recipe is SO delicious and most definitely hits the spot when we’re in the mood for fajitas. It freezes really well so I normally make it in big batches and store multiple containers in my freezer. Its a perfect make ahead meal for meal prep.
This mix is so good I often just eat it right out of the bowl. It is so versatile, sometimes I add it onto caesar salad, as the filling of an omelette, in lettuce wraps or toppings on pizza. No matter the dish, it’s always a hit and never disappoints.
I make my own Fajita Seasoning and keep an air tight container of it with all my other spices and home made seasonings.
For this recipe, heat up the coconut oil and minced garlic in a large skillet. Add the chopped bell peppers and onion and saute until the onions become a lovely golden brown color. I like to char up the bell peppers a little bit. I personally love the taste. Add the cooked shredded chicken, sprinkle the fajita seasoning and combine until everything is evenly coated.
