This quiche recipe is not only DELICIOUS and super easy to make, it also works really well as a make ahead, grab and go breakfast for those days when you are on the run. I make this nearly every Sunday during my meal prep session.
Quiches are so versatile, you can add any ingredients you like. Sometimes if I’m nearing the end of the week and I have a bunch of odds and ends in the fridge, I will chop everything up and just dump it in and it always turns out great. This time I went for a simple, yet delicious quiche with only 5 ingredients.
For this recipe I greased the baking dish with coconut oil spray and lined it with grated cheddar cheese in replacement of a traditional crust. Trust me, you wont miss a thing.
Put all the eggs into a large bowl or food processor and blend them for about 15 seconds, then add the softened cream cheese and blend for another 20 seconds or so. Slowly add the melted butter and blend until creamy, mix in the bacon and about a quarter cup of cheese. Gently pour the mixture into the baking dish, trying to keep it on top of the cheese layer at the bottom.
Top with the remaining cheese and bake for about 50 minutes at 325 degrees Fahrenheit.
When the quiche is done, remove from the oven and check to ensure the middle has cooked through. No need to let it cool, it will be ready to serve immediately.
